Egg Roll in a Bowl with Miso Soup
Getting tasty and healthy food on the table fast can be a struggle any time of year; adding holiday activities and school programs into the mix makes pizza delivery or the drive through even more appealing.
Egg roll in a bowl is a quick and healthy one pan dinner that’s full of flavor and veggies. Boasting minimal ingredients, this dinner can be on the table in 20 minutes. Serve it over rice, or cauliflower rice for even more veggie goodness, along side a cup of miso soup for a healthy take on Asian flavors sure to warm up the coldest night.
There are all sorts of frozen riced cauliflower mixes that are easy to prepare. I happened to find a Green Giant bag that had riced cauliflower along with green onion, peas and carrots which of course made me think of Forrest Gump. I often substitute coconut aminos. (I find it in my local grocery for half the price of Amazon) for soy sauce to give dishes a lighter flavor with just a hint of sweetness (it doesn’t taste like coconut).
Miso & Easy is a miso broth concentrate I find in my local grocery for significantly less than the Amazon price. Miso soup is super simple to make, heat water and add a couple tablespoons of the broth concentrate; green onions or chives can be added for garnish.
Egg Roll in a Bowl
There are many variations to the egg roll in a bowl recipe on the web, including this one, however, being the efficient (a kind word for lazy) woman I am, I make some modifications.
1lb breakfast sausage (turkey sausage is a tasty substitution)
1lb package of coleslaw
3 cloves of garlic
1T minced fresh ginger (I love ginger so I use double or triple the amount)
Soy sauce or coconut aminos, to taste, I use between 1/8-1/4c.
Brown sausage in a wok or other large pan over medium high heat. (I don’t drain the fat unless it seems to be super greasy. The fat works its tasty magic and is absorbed by the coleslaw mix.)
After sausage is cooked and crumbled, add garlic and ginger. Stir. Then add coleslaw mix to the pan and stir often.
While coleslaw is wilting down, heat water for miso soup and microwave the riced cauliflower.
In about five minutes, when the coleslaw has cooked through, add soy sauce or coconut aminos to the pan. Stir to combine.
Add water and miso concentrate to soup bowl and stir.
Add sausage and coleslaw mixture to a bed of cauliflower rice.
Serve, eat, and enjoy!
